There is no place on earth where coffee drinking has not reached spreading its wings from its original land of discovery in Ethiopia. However, since coffee beans need plenty of sunlight and rainfall to prosper, they can only be panted in regions with tropical and sub-tropical climate.

A Turkish saying describes coffee in the following words, - black as hell, strong as death, sweet as love - which is found on a narrow zone near the equator from 23 Degrees North to 25 Degrees South. As a product coffee which comes from beans grown in more than 70 countries runs a close second to oil in terms of dollar volume.

By far Brazil is the largest producer of coffee beans making an output of 28% of the total on an average. World famous Columbia falls far behind as a second producing 16%, with Indonesias output standing at just 7%. The fourth largest producer still reduces to half at 4% output.

In the largest islands of Sumatra, Java and Sulawesi countless one or two acre farms make Indonesia come third in the production of coffee all over the world.

Contrary to Brazil, plantations in Mexico are mainly small farms but with over 100,000 of them the total still stands strong enough to make the country an immensely contributing factor. The majority of them are placed in the south, like, Veracruz, Oaxaca and Chiapas, with the significant Altura beans named after their place of origin at high levels of altitude.

Though small producers, Africa, Kenya and Ivory Coast, are famous all over the world for the large, dark beans grown here. In the foothills of Mount Kenya are found some of the biggest beans which are used for making a very famous fruity coffee. The Ivory Coast specifically is important as the highest producer of robusta, frequently used in espresso coffee.

Coffee is ubiquitously found throughout the world and is extremely well-liked no matter if it the Indian Monsoon Malabar, the Tanzanian Peaberry, the Brazilian Liberdade or the Costa Rican La Fuente.

Recipe For Raw Chocolate Bars

Since 1842, when Cadbury's of England created the first chocolate bar, millions of people have had a love affair with chocolate. It's estimated that the average American eats 4.5 kilos per year and the average Swiss eats 9.5!

Of course the history of chocolate stretches back to ancient Olmec and Aztec civilizations where it was considered to be a "Food of the Gods."

I personally was never a big fan of chocolate, at least not until I started experiencing pure raw cacao. I think the reason is that normal chocolate has literally been cooked to death. To make a typical chocolate bar, cacao beans are crushed, fermented and then roasted at 150 C (300 F) for 1 - 2 hours. After that, they are tempered with boiling water for 20-30 minutes.

When you add processed sugar, milk products, preservatives, artificial colors, chemical flavors and more to this lifeless chocolate substance it's no wonder that some people develop allergies to chocolate. Interestingly, though, I've seen that most people with chocolate allergies, do not have a similar reaction with raw cacao.

Raw cacao has many nutritional benefits and is generally considered one of the most complete foods on the planet.

Since experiencing the effects of raw cacao for myself, I find myself using it often. I regularly add a few whole beans to my smoothies, I use cacao in salad dressings and sauces, and sometimes I just snack a few beans with a bit of agave or honey.

But, thanks to my partner Gabrielle's love of chocolate, I get most of my raw cacao in the form of great tasting raw chocolate bars.

I'm happy to share her basic recipe with you here.

To make this recipe you need a grinder or a mortar and pestle

Ingredients for simple chocolate:

1/2 C whole peeled cacao beans, ground
1/8 C coconut oil
1/8 C melted cacao butter (use coconut oil if not available)
1/4 C raw honey or raw agave syrup

Optional ingredients:

1/4 cup raisins
1 T almonds, finely chopped
1 drop orange, lemon, clove, lavender or other essential oil
Cinnamon to taste
Celtic sea salt to taste

Preparation:

Grind cacao until it is very fine. The cacao will have a consistency like raw almond butter and will stick to the sides of the grinder. Mix ground cacao with coconut oil or cacao butter in grinder. Remove mixture and add honey and other ingredients. Stir well with a fork. The mixture should be able to be poured. If not, add more coconut oil. Pour into ice cube trays or other forms and freeze for 45 minutes. Serve immediately after removing from the freezer.

A Few Interesting Facts About Cacao and Chocolate

The word 'Chocolate' comes from the Aztec word, "cacahuatl" or "xocolatl." This means 'bitter water'.

Raw Cacao was regarded as an aphrodisiac by Aztecs.

In 1624 Johan Franciscus Rauch an Austrian professor, tried to ban chocolate from monasteries and urged monks not to drink chocolate as he said it "inflamed passions."

Cacao contains antioxidants which may help prevent cancer and heart disease.

Cacao brings instant comfort and acts as a mild anti-depressant by increasing our serotonin and endorphin levels.

Cacao contains theobromine, which is a mild relative of caffeine and magnesium. This chemical is found in some tranquilisers. Because coffee also contains caffeine, it both picks you up and calms you down.

Cacao beans were so valuable in ancient Mexico that the Maya and subsequent Aztec and Toltec civilizations used them as a means of currency to pay for commodities and taxes.

The French Leader Napoleon insisted that wine, from the Burgundy vineyard called Chambertin, as well as chocolate be available during military campaigns.

During the Second World War, the U.S. Government commissioned Milton Hershey to create a candy bar to be included in soldier's rations. The candy bar chosen was the famous Hershey Milk Chocolate Bar.

Every Russian and American space voyage has included chocolate bars.

Greek Coffee - How to Make Greek Coffee Properly

It traveled to Turkey from Yemen and from Turkey it became known in Greece. It became so popular that people started calling it "Greek coffee" instead of Turkish (or Arabic) coffee.

Differences

Usually Greek coffee gets roasted lighter than traditional Turkish coffee.

Another difference is that Greeks rarely add spices to their coffee.

How to make Greek coffee

The basic ingredient needed for a delicious Greek coffee is fresh roasted coffee, ground to an extra fine coffee powder (finer than espresso). You can also grind you own coffee beans using a traditional Greek coffee grinder or a modern high quality burr grinder.

Like Turkish coffee in order to make Greek coffee you basically bring a mixture of water and ground coffee almost to boil. Although Turkish people boil their coffee usually 3-4 times Greeks prefer boiling it 1-3 times.

The blends used to make Greek coffee have usually a high percentage of Brazilian coffees, and also some Robusta or a "secret" ingredient to add some more flavour (Colombian coffee, Ethiopia Harrar or Yemen Mocha).

In order to make Greek coffee we need a coffee pot known as briki in Greece. This special Greek coffee pot has a characteristic narrow top which facilitates the correct slow brewing of Turkish coffee and the forming of the famous "kaimaki", which is basically the crema-froth on top of the coffee.

Traditionally these pots were made of copper or brass, but nowadays they are mass produced using stainless steel which is more durable. (I still prefer the brass ibriks for lots of reasons...). Use the proper size coffee pot to make better coffee and better froth. If you are going to make two demitasse cups of coffee use a 2-cups size coffee pot. If you use a much larger sized pot, crema forming will be much harder.

For one cup of coffee, fill the coffee pot with one demitasse cup of cold water, 1-2 teaspoons of Greek coffee, sugar to taste, and then put the pot on low fire. It is very important to use low fire and cold water to extract more flavor from the coffee. Use a gas stove-top or preferably a traditional tabletop burner.

Once the mixture comes almost to a boil and the foam covers the top, pour it into a demitasse cup slowly. You must do this slowly in order to retain the crema layer (froth) on top. If you fail to remove the coffee pot from fire on time, the coffee mixture will foam up quickly and it will get spilled everywhere! Be careful to not let this happen!

Small tip if you want to make two cups or more

There is an old trick used to maximize the froth on top of every demitasse cup, which basically involves taking the froth with a teaspoon from the coffee pot and then adding it to each demitasse cup, before pouring the coffee.

Serving

Traditionally the coffee is served using decorative discs, in small demitasse cups made of fine porcelain.

You can also pair Greek coffee with a nice desert like cookies ("koulourakia"), "halva" or "baklava".

Things to notice

Some people bring the coffee to boil only once. Other people prefer twice and there are also some people who argue that bringing the coffee to boil three times is the absolute minimum.

Another point of argument is the stirring. Some people stir coffee, water and sugar only in the beginning and some other stir continuously till the end to make more froth.

Personal opinion

I prefer to stir the coffee continuously till the end and I also let it foam up twice.

"Why?" you may ask. It is just my taste! You can experiment and find what you like best.

What's most important is the freshness and the quality of your Greek coffee.

Goan Trout Recipe - Trout Does Not Get Much Better Than This

I am going to teach you the most amazing Goan Trout recipe! it was taught to me by my father when I was about seven. He was a real hippy in his day and travelled to Goa in his college years. He met my hippy mother there and this is the first meal they ate together. Well almost - the original recipe was some sort of white salt/fresh water fish he didn't recognise but we have always made it with trout which we caught in the creek behind our house.

I have made it with many different types of fish but the mild flavour and tender meat of fresh trout is in my opinion as good as it gets. Feel free to experiment though. You may disagree.

This is now one of my wife's favourite recipes. However, although I loved it as a kid, my kids have still failed to see the attraction!

Therefore I have written this recipe as a romantic dinner for two - just as my parents had all those years ago and my wife and I still enjoy now.

Preparation time: 20 minutes
Cooking time: 12 minutes

(Serves 2)

INGREDIENTS for Goan Trout

2 Very fresh trout slit three times with a sharp knife on both sides

2 Tablespoons garlic and ginger paste
1/2 teaspoon salt
1/2 teaspoon chilli powder

Tempering Ingredients
4 Tablespoons vegetable oil
10 fresh curry leaves (If you cannot find fresh curry leaves, use 20 dried)
1/2 teaspoon black mustard seeds

Cooking Marinade

10 black peppercorns
10 cloves
1/2 teaspoon fennel seeds
5 small red dried chilies

5 cloves of garlic
2 Tablespoons white wine vinegar
1/2 teaspoon salt
1 teaspoon sugar

To make the garlic and ginger paste

Place 5 cloves of garlic and a one inch piece of ginger in a spice grinder or pestle and mortar. Add about a tablespoon of water and grind to a paste. add the salt and chilli powder.

Marinade the trout

Rub the ginger/garlic paste onto the trout - both inside and out. Be sure to press it into the slits in the skin.

Let the fish marinade in the garlic and ginger mix for about an hour.

Now make the cooking marinade.

Pour the whole dry spices into a frying pan and roast over medium heat. When they begin to smoke, take off the heat.

In a spice grinder or pestle and mortar add the dry spices to the garlic, vinegar and salt and sugar. Grind to a fine paste.

To cook

Preheat your oven to 200c / 400f

When you are ready to impress your significant other. heat the oil in a frying pan large enough to hold both of the trout. When the oil is very hot, throw in the black mustard seeds and curry leaves

When the mustard seeds begin to pop, place the fish in the oil and let it cook for about two minutes per side.

Carefully remove the fish from the pan and place on a baking tray. Cover the top side of the fish with the cooking marinade and place in the oven.

Allow to cook in the oven for eight to ten minutes.

Enjoy with a tossed green salad.
